Ingredients:

- Salt & pepper to taste
Instructions:
Cooking the Bamboo Rice:
- In a rice cooker or on the stovetop, bring 3 cups of water to a boil.
- Add the bamboo rice, reduce the heat to low, cover, and let it cook for about 30 minutes or until the rice is tender and the water is fully absorbed.
- Fluff with a fork and allow it to cool before adding it to the salad.
Assembling the Salad:
- In a large bowl, combine the cooled bamboo rice, green apple, red apple, orange segments, pineapple, pomegranate, and chopped lettuce.
- In a small bowl, whisk together olive oil, orange juice, honey, Dijon mustard, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to mix.
- Sprinkle toasted almond flakes on top for a crunchy finish.
